Galaxy has a long and storied history with us here at Polly’s. From those very first brews when we somehow managed to get our hands on then one of the most bought up and sought after hop varieties in the world, through our headline beer Rosa, all the way to modern interpretations where we find ourselves in 2026. Since finding himself back at the brewkit, our owner Sean has been impressing his passion for nostalgia and when things were just that little more simple on our day to day, and this has been reflected in the straight up simplicity of BIG. What do we fancy brewing? Single hop Galaxy IPA, keep it simple. Any ideas on the name? Nah, keep it simple - let’s just call it BIG. There’s nothing simple about the execution of this IPA though, and Galaxy is showcasing itself excellently - big passionfruit and peach notes at the forefront, with slightly more subtle notes of citrus fruits and that unmistakeable undercurrent of diesel to boot.
