Garage Project - Wildflower: Hopbine
Pre-Order: Shipping Early December
Beer Description
Nature takes centre stage in Wildflower: Hopbine, an extraordinary 6.8% wild ale from Wellington's innovative Garage Project. Part of the brewery's fascinating series of foraged flower fermentations, this remarkable creation celebrates the untamed character of freshly harvested hops and the unpredictable magic of spontaneous fermentation. Rather than relying on conventional brewing yeast, whole hop bines were plunged directly into a light golden wort, allowing the naturally occurring wild yeasts living on the plants to initiate fermentation. The resulting beer was then patiently matured in oak barrels for an entire year before receiving a final infusion of freshly harvested wet hops.
The result is a wonderfully complex and expressive sour ale, combining the bright, vibrant character of fresh hops with the fascinating depth of extended oak maturation. Expect enticing aromas of fragrant wildflowers, freshly cut grass and delicate citrus, accompanied by subtle earthy undertones and the unmistakable character of wild fermentation. On the palate, refreshing citrus acidity mingles with gentle floral hop notes, nuanced oak and an intriguing rustic complexity, creating a beautifully layered drinking experience.
Elegant, lively and delightfully unconventional, Wildflower: Hopbine finishes clean and refreshingly tart, with lingering citrus, fragrant meadow flowers and a wonderfully fresh hop aroma. A captivating showcase of traditional fermentation techniques and Garage Project's adventurous approach to brewing, this is a beer for those who appreciate the fascinating intersection of wild ales, fresh hops and patient barrel ageing.
