Holy Goat Brewing x DMC Brewery - Beneath The Remains

A wonderfully distinctive and beautifully complex Golden Sour from Dundee's acclaimed Holy Goat Brewing, Beneath The Remains is a fascinating collaboration with the much-missed DMC Brewery, combining the extraordinary character of wild fermentation with the vibrant, aromatic warmth of freshly pressed ginger.

Created using Holy Goat's signature Golden Sour base, this exceptional beer undergoes primary fermentation with Brettanomyces yeast, developing layers of expressive fruit character and refreshing acidity. To complement this complex foundation, the brewers processed an astonishing 100kg of fresh ginger root, carefully shredding and pressing it to extract its aromatic juice before adding it during the final stages of fermentation and conditioning.

The result is a beautifully layered sour beer bursting with bright citrus, juicy stone fruits and delicate tropical notes, accompanied by the unmistakable fragrance of fresh ginger. On the palate, lively acidity brings a refreshing tartness, while subtle ginger spice adds warmth and complexity without overwhelming the beer's natural fruit character.
