Discover the extraordinary beers of One Drop Brewing Co., one of Australia's most innovative independent craft breweries, renowned for its outrageously fruity Smoothie Sours, intensely aromatic Hazy IPAs and boundary-pushing approach to modern brewing. Established in 2019 in Botany, Sydney, One Drop draws inspiration from the area's vibrant community, creative culture and laid-back coastal lifestyle. With a passion for experimentation and an uncompromising commitment to flavour, the brewery has developed an international reputation for producing some of Australia's most adventurous craft beers. From thick, fruit-packed dessert Sours to beautifully balanced Lagers and heavily dry-hopped IPAs, One Drop combines carefully selected ingredients with innovative brewing techniques. Its distinctive Clean Fusion process demonstrates the brewery's technical ambition, allowing exceptionally expressive hop aromas while minimising unwanted bitterness and harshness.
Best known for its extravagant fruit-driven creations, One Drop produces an ever-changing selection of Smoothie Sours, Pastry Sours and hop-saturated IPAs. We Jammin' is a wonderfully indulgent Smoothie Sour combining mango, guava and banana with Tahitian vanilla, lactose and icing sugar for a thick, tropical dessert-like experience. The Double Take series explores intensely flavoured Imperial Sours, with rotating fruit combinations delivering vibrant acidity, juicy sweetness and remarkable depth. Skanky takes indulgence even further, layering mango and guava with blackcurrant, boysenberry and vanilla for a luxurious, berry-packed finish. Beyond its celebrated Sours, One Drop produces expressive Hazy IPAs and Double IPAs, showcasing modern hop combinations and its innovative Clean Fusion brewing technique. From crisp, refreshing Lagers to extraordinary fruit-filled creations, One Drop represents the adventurous spirit of contemporary Australian craft beer.
