Very occasionally, it’s nice to put our collective heads together here at HQ and just let what we’re really good at and can do naturally happen with one of our beers. Not everything has to be drenched in 30g/l dry hopping rates; it’s perfectly fine to have an IPA that allows the supporting cast to really show its characteristics and shine alongside the hype. A solid backbone of extra pale malt, wheat and oats lays a foundation of biscuity sweetness, before our favourite hop pairing in Polly’s stalwarts Citra and Simcoe bring pineapple, honeymelon, mango and papaya juice to the table, rounding off with just a smattering of bitterness from an 80 degree whirlpool addition of Mosaic balances everything out. All kept together with our bespoke LA3 yeast strain, this is us doing exactly what we do best.
