We’re big believers in paying respect to our past whilst looking forward to the future here at Polly’s. Developing all the tips and tricks we’ve learned over our six years to continually improve our beers is part of our brewery motto, and we’ve paid special attention to that MO on Crystal Vision. A beer developed from a kick of nostalgia when talking about the incredible Azacca Simcoe DIPA from that Originals range that carried us through our first year, we wanted to give a nod to that incredible beer whilst putting our 2024 hats on with the recipe. Comparatively an IPA by our hopping rate standards today, we’ve absolutely supercharged this beer with the freshest crops of Simcoe and Azacca we could get our hands on – giving this beer that unmistakable fruit salad of juicy peach, apricot and berry from Simcoe, backed up with those distinct Azacca notes of mango, orange, and papaya with a whisper of piney bitterness running throughout.
