A tart farmhouse ale whose inspiration is drawn from freshly baked berry pie features a half-pound per gallon of strawberries, blueberries and blackberries. The sweet acidity of the berries paired with the mild farmhouse funk of our house culture is rounded by the addition of full bodied Haw Creek honey.
Chrysopolis shows a golden yellow colour and very low carbonation. The taste reveals the sharp lactic acidity with a typical harshness from Brett, slightly blurred by reminiscences of vinegar. The wood is present but is totally discreet, staying politely in the background. The finish is very persistent and intense, showing great finesse.
St Bretta Clementine
Tart, effervescent - Colorado wild beer specialists Crooked Stave have turned out another thrilling brew that is acidic, dry, almost salty. The ‘Bretta’ relates to the brettanomyces, a wild yeast that gives beer funky and acidic flavours, and often a lot more complexity. This beer has a depth of flavour that is quite amazing, while still being super refreshing.
