The Heart Desires
This beer started life as a simple blonde ale with low bitterness and was fermented with Thornbridge's house yeast who then aged this in Burgundy barrels with the fruit for well over a year. Adding cultures of Brettanomyces, Pediococcus and Lactobacillus at set points let them sour the beer gradually over many months and give layers of flavour that can only be developed over time. The fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast character to come through. The resulting beer is a clean, zingy and intense blend of fruity tartness with intimations of crisp Sauvignon Blanc grapes.

Brett Peat Daydream is a blend of three different beers: a Peated Barley Wine Style Ale, a Rauch Marzen with a part aged in Scotch Whiskey barrels and a Brett Ale which has been innoculated with Brettanomyces before a six month maturation in a steel vessel.
La Bonte Figs
La Bonte Fig is an open fermented beer using the house Brett yeast that makes it a wildly tart beer. It is blended with a golden sour when a load of figs are thrown in. The resulting beer does have a subtle fig aroma, and it's a refined beer that that would not be out of place on the dinner table with hard cheese.
