This beer started life as a simple blonde ale with low bitterness and was fermented with Thornbridge's house yeast who then aged this in Burgundy barrels with the fruit for well over a year. Adding cultures of Brettanomyces, Pediococcus and Lactobacillus at set points let them sour the beer gradually over many months and give layers of flavour that can only be developed over time. The fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast character to come through. The resulting beer is a clean, zingy and intense blend of fruity tartness with intimations of crisp Sauvignon Blanc grapes.
La Luna Rossa
Blend of Chysopolis (fermented in barrels for 2 years before having Morello cherries are added to it) with a part of Ultima Luna (Barley Wine matured in Amarone barrels, with Marasca Morello cherries) and a part of young beer. In the mouth it is tasty, large, persistent, and ends with a magnificent and uplifting acidity.
St Bretta Clementine
Tart, effervescent - Colorado wild beer specialists Crooked Stave have turned out another thrilling brew that is acidic, dry, almost salty. The ‘Bretta’ relates to the brettanomyces, a wild yeast that gives beer funky and acidic flavours, and often a lot more complexity. This beer has a depth of flavour that is quite amazing, while still being super refreshing.
