Pale ales are predominantly made with pale malt to give these beers a lighter colour. There are several different varieties with the most popular today being American Pale Ale (APA) and India Pale Ale (IPA).
Flavour varies from intensely hoppy (West Coast Style) to well balanced (East Coast style) and juicy & fruity (New England style)
Pairs well with spicy food such as curry. Bitter IPAs can enhance salty flavours while maltier beers latch on to sweeter dishes
