To create this beer we choose from a range of different age barrels to create an overall blend of one, two and three year-old beer. Having won the Gold Medal at the World Beer Cup (2016 Wood-Aged Sour Beer), we now have the opportunity to release beer from the refill of those winning barrels, alongside some we held back longer, plus others that are slightly younger. Still with a sharp acidity and rounded fruit flavour, this beer is growing in complexity year on year. Aged in Burgundy barrels with organic Morello cherries, cultures of Brettanomyces, Pediococcus and Lactobacillus, this is an incredibly complex beer with notes of sour cherry, juicy red berries and oak.
